A study conducted at the Scripps Research Institute in San Diego has shown cucumber is truly a superfood. Cucumbers are 95% water and have a negligible calorie count. The research has also found some potentially life-saving benefits at the cellular level. As we age, our bodies experience a rise in decaying cells. When these cells accumulate, the chance of them becoming cancerous rises sharply. Eliminating the build-up of these cheps is the job of fisetin – a flavonoid found in cucumbers. They can also be found in apples, strawberries and onions. It also decreases inflammation.

More reasons to add cucumber to your green juice, salad or sandwich. If you prefer something with more flavour, you can do a simple stir fry cucumber with eggs.
