As we enter February, the last month of summer in Australia. Thank goodness the end is almost here. Before you jump into conclusion to defend you love summer, Australian’s summer especially in Perth gets a little crazy. Picture days of more than 38 degrees Celsius (yes, warmer than our body temperature!) It is a little insane down here so I personally cannot wait for the weather to cool down soon in March.
Anyway, here’s a cool recipe I found by Martha Stewart. It’s coconut water ice pops! One of the best combinations for summer! Coconut water helps you to hydrate faster and replenish lost fluid and ice pops, it is lactose free and gluten free naturally, making it diet-friendly to more people! Here is the recipe:
- 1 cup chopped fresh mango, papaya, pineapple, or kiwi
- 3/4 cup coconut water
- 2 tablespoons agave nectar
- Combine fruit, coconut water, and agave nectar in a blender.
- Puree until smooth.
- Transfer to Popsicle molds; freeze.
