If you are still thinking what to get for your mum this Sunday for Mother’s Day, why not surprise mum with a healthy and delicious breakfast? I found this Ham and Asparagus Frittata recipe from Better Homes and Gardens. From the looks of it, it looks delicious and appetising. The recipe sounds easy too so you would not make a big mess in the kitchen on Sunday. This recipe is gluten free so in case if anyone in your family is gluten intolerance, this will be an ideal plate to share with everyone. You can make this delicious plate organic too by getting organic ingredients from the supermarket or grocery.

½ cup (125ml) skim milk
Salt and freshly ground black pepper, to season
Cooking oil spray, for greasing
125g shaved lean leg ham, coarsely chopped
2 small bunches asparagus, halved diagonally
2 Tbsp small dill sprigs
125g extra light cream cheese
1. Whisk eggs and milk together in a large jug. Season with salt and pepper.
2. Lightly spray a 22cm (base measurement) ovenproof frying pan with oil and heat over a medium heat. Add ham and asparagus and cook, stirring, for 5 minutes or until asparagus is almost tender. Stir in ½ the dill.
3. Pour over egg mixture, tilting pan so mixture runs under ham mixture. Reduce heat to low and cook for 5 minutes or until starting to set. Dollop over small spoonfuls of cream cheese.
4. Preheat grill to high. Put pan under grill for 5 minutes or until frittata is just set. Set aside for 2 minutes. Top with remaining dill, cut into wedges and serve.
